A rare part of a horse that can only be obtained from a few kilograms of one horse, and is both moderately tender and has a good sting to it. (A cross between the tenderness of a fillet and the marbling of a marbling). It is soft and melts in the mouth. The diaphragm is actually in the (offal) category. Normally, horse meat becomes tough if it is overcooked, but since the upper diaphragm is a less tough part, the combination of lightly seared, salt, pepper, and wasabi enhances the flavor of the horse meat.
