赤身 馬刺しと言えばまずは赤身と言われるほど、オーソドックスな部位です。赤身のお肉は淡泊ですが、柔らかく鉄分も豊富。初めて馬刺しを食べるお客様に先ず食べて頂きたい部位です。馬肉の良しあしは、赤身を食べれば分かります。何故なら、お肉は熟成した方が旨いが増す、熟成牛(dry-aging beef)などの言葉がありますが、馬刺しは捌きたての新鮮さが一番です。時間が経つにつれ鮮度や風味や味が落ちて来ますので、赤身の部位はここが顕著に出ます。ですので美味しい馬刺しかは赤身を食べれば分かるのです。馬刺しが大好きなお客様にも『ここの赤身が今までで一番旨いよ』や『今まで食べてた馬刺しとは全然違う』等のお声を多数頂いております!自信をもってまずは赤身をおススメです。
