Futaego is a part found only in horse meat and is a type of rose meat. Its main characteristic is its three red and white stripes, as a layer of lean meat is sandwiched between layers of fat. The combination of the flavor of the fat, which has a light sweetness and melts easily, and the lean meat, which is crispy and tender, is superb. It is located on the outside of the belly and is a part that moves frequently, so it is elastic when you eat it, but the more you chew it, the more flavor comes out.
