
This is the second in the series of horse sashimi served with a slightly different sauce. This time, we tried it with "Vinegared Miso".
The sweetness of the miso and a hint of sourness went well together, and I enjoyed a completely different flavor than usual. Personally, I recommend the "futaego," which has a firm texture, and the "hire sashimi," which is elegant and has no peculiarities. You can easily enjoy them with seasonings you have at home, so please give them a try.
■ Vinegared miso (per person) *Adjust to taste.
1 tablespoon shiro-miso (white miso)
1 1/2 teaspoons sugar
1 1/2 teaspoons vinegar
