"Tategami" is rare and rarely eaten outside of Kumamoto. At first glance, it looks pure white and just like fat, but it is light and has a crunchy texture.
Compared to other meats, horse fat does not feel fatty. This is because the melting point (the temperature at which the fat melts) is about the same as a person's body temperature. When you put it in your mouth, it melts inside.
