Futaego is a part found only in horse meat and is a type of rose meat. Its main characteristic is its three red and white stripes, as a layer of lean meat is sandwiched between layers of fat. The combination of the flavor of the fat, which has a light sweetness and melts easily, and the lean meat, which is crispy and tender, is superb.
